The Baked Cod Recipe I Can’t Stop Making

When a friend sent me this baked cod recipe from Barefoot Contessa, I was immediately interested in trying it. Even though I had a good guess my kids wouldn’t eat this (here’s a look at some kid-friendly meals I make for my kids), I’m a big fan of seafood. Plus, I’m always looking for new recipes to try. I’ve been really trying to get more creative in the kitchen, and I love trying recipes that come recommended by other people.

Don’t be intimidated by the number of ingredients in this recipe. It’s surprisingly easy to throw together (it’s literally tagged beginner on the recipe. Plus, I appreciate that there’s not a ton of prep work. To make this recipe, it takes me about 20 minutes from start to finish.

I have made this for friends before and it’s a big crowd pleaser. Being a white fish, this doesn’t taste fishy at all. So, even if you’re not a huge seafood lover, I really think you’ll enjoy this recipe.

Typically, I will eat this dish with a side of asparagus or an easy salad. If you want some salad ideas, here’s the salad I love to prep at the beginning of the week to have on hand.
