Mayple Soy Salmon

Today I am so excited to share one of my favorite recipes. Duncan and I eat this (at least) a couple times a month – its delicious AND simple.

I haven’t always been comfortable cooking, and lets be honest, I’m still not that comfortable. But, it has definitely been one of my favorite pastimes this year. I love finding easy, go-to recipes. I also love spending time in the kitchen with Duncan. We put on one of Duncan’s playlists and spend time together whipping up something delicious. In some ways, cooking dinner has become one of my favorite parts of the day.

This recipe is one of our favorites because it’s not only absolutely delicious, but, it is easy to make and has only a few ingredients. It also pairs well with so many things (our favorites are rice and asparagus). I originally found it on Skinny Taste and certainly cannot take credit for it, but since we cook it so often I wanted a home for it on my blog!

Ingredients

  • 1/2 lb salmon
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 3 tbsp maple syrup
  • 1 tbsp sriracha

You will also need a baking sheet, plastic ziplock bag and sauce pan

At least 30 minutes prior to baking, add the maple syrup, Sriracha, garlic and soy sauce (use tamari for a gluten free option) to a plastic bag. Mix ingredients together in bag. Add salmon to bag. Let marinate for at least 30 minutes or up to 1 hour.

Preheat oven to 425 degrees. Place salmon on a baking sheet (I line mine with foil for an easy cleanup). Keep the marinade for later. Once oven is heated to 425 degrees, place salmon in oven. Bake salmon for 9-12 minutes or until done (the middle of the filet should be around 130 degrees, which is medium).

While the salmon is baking, place the marinade from the plastic bag into a sauce pan. Heat the marinade on medium heat for about 10 minutes, or until marinade has reduced by about 1/2.

Pull out the salmon once cooked.

Pour the sauce over each piece of salmon. Serve with your favorite sides. And enjoy!

Maple Soy Salmon

BAKE: 425 degrees
PREP TIME: 5 minutes
MARINATE: 30 minutes
BAKE TIME: 9-12 minutes
TOTAL TIME: 44 minutes

Bake salmon for 7-10 minutes or until done (the middle of the filet should be 130-145 degrees, depending on how you want your salmon cooked).

While the salmon is baking, place the marinade from the plastic bag into a sauce pan. Heat the marinade on medium heat for about 10 minutes, or until marinade has reduced by about 1/2.

Pull out the salmon once cooked. Pour the sauce over each piece of salmon. Serve with your favorite sides. Enjoy!
