Spring Recipes I Can’t Wait to Try

One of my favorite things about spring is all the fresh produce that’s suddenly in season. I also just enjoy lighter dishes in general, so spring and summer foods are typically my favorite. I don’t know about you, but I love a good spring salad.

As I was meal planning recently, I came across a few recipes that I wanted to share. Most of these are from my favorite food blogs, but I also used Pinterest to find a recipe or two that looked good too!

If you’re like me, you live for quick, easy, and healthy dishes that aren’t difficult to shop for and can be thrown together on a busy weeknight. After a full workday, I am all about simplicity. Hopefully, you can find a recipe or two that you might enjoy making this spring!

Was there any question I’d start this post off with a recipe from The Defined Dish!? I am OBSESSED with everything she shares. This spring spaghetti carbonara looks so good. I love that this pasta dish has some veggies added so you get at least a little green! Hand me a nice glass of red wine and this pasta dish and I’m all set.

There’s something about the combination of steak and blue cheese that just gets me.Duncan is actually a really healthy eater, but he rarely orders a salad because he’s worried it won’t fill him him. This is one of those salads that’s somehow light and filling at the same time — plus how good does that charred corn look?

If you live in Texas, Mexican food is basically one of the five food groups. While we love going to a Tex Mex restaurant on the weekends, I love the idea of having a super easy dish I can make on the weekdays. Plus, let’s be honest, anything that includes avocado is a yes for me.

I love incorporating a seafood meal into the rotation at least once a week if possible. There are so many benefits to eating fish, and this looks like a great way to include it. I’ve made a similar bowl with chicken before, which was so good. It reminded me a lot of a Chipotle bowl!

I would probably make this a side dish or appetizer instead of a main dish but it looks amazing. I’m such a sucker for the combination of tomatoes and mozzarella cheese! Plus how yummy does this basil pesto look!? This would be so good to serve as an appetizer for a chicken or pasta dish.
