Hey y’all, happy Friday! Y’all might have remembered me talking about this on stories and in the newsletter (p.s. are you subscribed?!), and I’m finally doing the post I promised! Lately, I’ve been starting to cook more…yay! But specifically, I’ve been cooking things that make a lot of food and are just as good reheated. Because you know how some recipes are amazing – even better – the next couple days, and some fall flat? Yeah, well I wanted more of the first. For days when I don’t have time or energy to cook lunch or even dinner. Which is a lot…

So, I thought it’d be fun to ask the BTD Community since there’s no better place to look for advice like this. And y’all, you came through! We got so many responses via the newsletter which were SO fun reading through. I’m so grateful to have y’all and that y’all take the time to respond to things like that. It makes my heart happy! OK but back to food (heart you guys!).

Anyways, here’s the list of the recipes that y’all suggested in case you want to make food that you can easily grab the next few days. Whether you’re single and are trying to feed yourself, or have a family or husband to keep full, these all sound amazing! I’ve even started making a few. Healthy Taco Salad

(Recipe below!)

This reader wrote in with their own recipe which I loved! Here’s what to do: “The recipe I use is ground turkey, onion, green bell pepper, zucchini, and taco seasoning! I also like to cook up a ton of quinoa for the week to add to salads or any other meal. But with the taco meat I usually just put it on top of greens and quinoa to make a little taco salad. I seriously ate this for lunch every single day at work this week and didn’t get tired of it. So easy, so cheap, and so yummy.”
