Hi friends! Another week, another recipe post. I’m really getting into this cooking thing. Most of the recipes this week are from two of my favorite authors – The Defined Dish and The Skinny Taste. Duncan and I are also SO excited to have breakfast for dinner!

I love sharing these recipes and I LOVE the community we have created here at BTD. I would love for you all to suggest some of of your favorite meals and/or recipes. Maybe I’ll do a poll on Instagram? Let me know what you think.

What I’m Cooking This Week:

Sunday – Maple Soy Glazed Salmon (Skinny Taste)

My roommate in Texas used to make this and I remember LOVING it. I usually don’t like salmon, but this marinade is AMAZING. I’ll let you know if it’s as good as I remember.

Hibachi Style Chicken with Magic Mustard Sauce

This meal was a little out of our comfort zone, but we loved it! Once you get over the fact that you have to get some ingredients you *might* not have in your pantry already, then you’re set! The sauce really is so so yummy!

This is the first of two recipes from the defined dish. All of her recipes are so great – both on her blog and in her book. I highly recommend checking her out. With that said, this chicken looks yummy AND healthy. Can’t wait to try!

Tuesday – Baked Mongolian Beef Meatballs (The Defined Dish)

These look so yummy (and they’re pretty healthy)! I think I’ll probably pair the meatballs with some cauliflower fried rice.

Wednesday – Crockpot BBQ Chicken (Family Fresh Meals)

This is a repeat recipe. Duncan loved this one so I thought I would make it again – plus it’s so simple to make. Just throw all the ingredients in the crockpot and in a few hours it’s ready to eat. Plus, I have most of the ingredients in my pantry already.

Thursday – Breakfast For Dinner

I might be most excited for this dinner. I don’t follow an exact recipe. I usually scramble the eggs. Then I spread some avocado on two pieces of toast. I sprinkle some everything but the bagel seasoning on the toast. And I cook bacon in the oven for about 15 minutes. Thats it! Enjoy!

Maple Soy Glazed Salmon (Recipe)

  • Maple Syrup
  • Reduced sodium soy sauce
  • Siracha hot sauce
  • 1 garlic clove
  • 4 6oz wild salmon fillets

Hibachi Style Chicken With Magic Mustard Sauce (Recipe)

  • Ground mustard powder
  • Tahini
  • Coconut aminos
  • Red Boat Fish Sauce
  • ½ inch chunk of ginger (peeled)
  • 2 cloves garlic
  • 2 lbs boneless skinless chicken thighs
  • ½ White onion
  • 8 baby bella mushrooms
  • 1 large zucchini
  • 1 carrot
  • Avocado oil
  • Ghee
  • Kosher salt
  • Black pepper
  • Toasted sesame seeds

Baked Mongolian Beef Meatballs (Recipe)

  • Avocado oil
  • 2 lbs Ground beef (85% lean)
  • 1 egg
  • Coconut aminos
  • Arrowroot flour
  • ½ inch knob of ginger – grated
  • 1 large cloves garlic
  • Kosher salt
  • White pepper
  • 2 bunches of green onions
  • Sesame Oil
  • Rice vinegar
  • Red boat fish sauce
  • Beef broth
  • Ketchup
  • Cayenne pepper
  • Toasted sesame sauce

Crockpot BBQ Chicken (Recipe)

  • 2 lbs boneless skinless chicken
  • BBQ sauce
  • Italian dressing
  • Brown Sugar
  • Worstershire Sauce
  • Salt

Breakfast For Dinner

  • 4 Eggs
  • Bread
  • 2 Avocado
  • Bacon
  • Everything but the bagel seasoning
